A great Vinagrette/Relish recipe for seafood

Ok, so cook your seafood with some salt and pepper (sea salt and freshly cracked).

Then, in a bowl mix

Good Olive Oil
Red Wine Vinegar
Finely diced Garlic (very little)
Thin sliced Shallots
Mint (to taste) cut to very thin strips
Basil (to taste) cut to very thin strips
A dash of good mustard (a great way to balance a vinagrette)
and half-sliced cherry tomatoes.

Let it sit for at least 15 minutes so that all the flavors can come together. Then pour on, or next to, your seafood.

I didn't put measurements because it depends on how much you need.

You want to make sure that you have a good balance between the vinegar and the olive oil. Keep tasting until you get just the right amount of flavor to your taste.

I have used this relish on fish (halibut, red snapper, swordfish) and shrimp, but it will probably also go well with scallops too.
